Happy St. Patrick's Day everyone! It's bitter sweet for my family. You see, we had to cancel our Spring Break trip to Ireland for this week, and we were supposed to be in Ireland right now, decked out in green from head to toe, and already have at least a few beers in our bellies. When this whole virus hit, and our vacation was cancelled, and I didn't plan on being home for St. Patrick's Day, so I didn't purchase a corned beef to make for dinner tonight. Did I mention that corned beef is my favorite meal? I make it myself for my birthday in August, that is how much I love it!

8:00am - Alarm clock goes off, and I have slept through an entire night again. Ahhh

8:30am - Chinese food take-out leftovers for breakfast!!!

9:00am - Hubby's work at the bank has gone online, so he is now working from home. He is in his favorite shorts and has a full cup of coffee in front of him. He is happily working. I need to finish up my homework this morning for my edTPA that is still due next Monday. I just have student assessment reports left to complete, upload and hit submit to be all finished with it. This is my only goal for the day.

10:00am - Doing a complete happy dance. Went to the big deep freeze and found a corned beef frozen!!! Currently popping it into the crock pot to see if I can get it fully cooked by dinner time. Might be a late night dinner tonight, but I am so happy!

11:00am- Just remember that it is St. Patrick's Day. 21 year old cracked open a Guinness Beer and is wearing his Ireland Futbal jersey while watching Star Wars the Clone Wars on Disney+. I officially unpacked my Spring Break suitcase. I needed my St. Patrick's Day shirt to wear, and I just couldn't put off unpacking any longer and had to unpack all of my "trip" clothes.

11:30am - Off to the Walgreen's drive-thru to pick up a 30 day supply of the families prescriptions.

12:00pm -  Deep cleaned most of the kitchen, I still have the stove to go. I hate cleaning the stove. I will tackle that later in the day. I did use all of my reusable paper towels while cleaning today. I purchased them last month, but wanted to use up my actual paper towel supplies first, but I am rethinking that now. I want learn how to use reusables first and see how they wash up in the washing machine. Set up the whole reusable paper towel stations in the kitchen. Clean ones on top of the counter, and a bin under the sink for the dirty ones.

12:15pm - Stir my Amish Friendship Bread starter. Three days down, seven to go!

1:00pm - Hubby taking another one of his online tests for his college class. He only has two test and a final left for this course, and then he is onto Biology. His biology class came with an "at-home" lab kit. Little does the youngest boy know, he will soon be learning how to conduct biology experiments. Hope that goes better than the book reading went yesterday.

1:30pm - Finishing up my one task for my edTPA. Learning how to use the scan button on my printer at home. Hoping for the best.

2:33pm - Hit the "Submit to Pearson" button for my edTPA. Panicking to learn that it isn't instant and could take up to an hour for Pearson to receive all of my 140 page paper. Want to just see my transfer is complete so I can have a drink!

2:35pm - Make a late lunch of the last piece of homemade bread, toasted and smothered with an over ripe avocado. Then a different panic sets in, as I realize that this might be my last avocado for the foreseeable future.

3:34pm - Officially submitted my edTPA paper to Pearson! It ended up being 121 pages long and two video clips equaling 17 minutes. But I am done! My only hurdle left before graduation is finishing up my student teaching. That will be more interesting given the school closures. But hey, it's all a learning experience, right?

3:35pm - Have a shot of Fireball (to celebrate) and take the dogs for a walk.

4:30pm - Make my Irish Soda Bread for dinner. Day 3 and third type of homemade bread being made. I love this Irish Soda Bread recipe, and the funny part is that it is from the Harry Potter Cookbook! Made copies of interesting recipies when I was subbing at a middle school library and the librarian (thanks, Lucy) let me take the book home for the night and I made copies of ones that looked interesting. So far, this one is my favorite, I've now made it four times!

5:00pm - Daily news updates on what is going on in Minnesota and Nationally. Currently 60 cases in Minnesota. So to me (I am NO expert) at least it is not doubling in size everyday.

6:00pm - Dinner time! Corned beef did cook all the way through. Irish Soda bread is warm and delicious and steamed broccoli is what's being eaten. That is the last of my fresh broccoli, so onto the frozen bags we now go.

7:30pm - Sit down with the boys to watch the fourth Avengers movie in three days - Iron Man 2

9:30pm - Actually tired. I think my circadian rhythm is starting to kick in. I used to watch a YouTube channel where the couple was living off of the grid and they naturally fell into their circadian rhythm. Very interesting. Might need to do a little more digging and research on that one.
