Low-Carb Chicken BLT

Hubby and I have gotten on a low-carb kick, trying to eat better so we can live longer. You know, the longer you live the more stuff you can do with your family. So we figured we better start watching what we eat so we can hang out with the kids more.

On Pinterest there was a pin for a no-bread BLT where they grilled and then sliced open a skinless boneless chicken breast. Well, when I make chicken I normally pound the heck out of it with a mallet to actually make it tender first, leaving little room to slice it open after it is cooked. So we adapted the recipe to make it more "us". Don't leave out the pesto mayo, it really brings the entire meal together.
